Jima
After 8 to 10 years of agave growth, the harvesting process, traditionally called "Jima", begins. The process consists of cutting the leaves of the plant to reach the heart, also known as “pineapple”.
Cooking
The pineapples are taken to furnaces soften the fibers and thus facilitate the extraction of sugars.
Grinding
At this stage the juice is extracted from the agave, also called fresh must.
Distillation
It is the process by which separation of water and alcohol is performed. The procedure is carried out in copper stills, stainless steel or continuous distillation towers.
Aging
The liquids are deposited in barrels, where the beverage matures for a variable time and obtains several characteristics.
